Sausage Gravy



An old southern breakfast recipe passed on by my grandmother. The type of sausage you use makes all the difference. Experiment until you get the flavor you want. Jimmy Dean regular does a good job.

12 oz pork sausage
1/2 cup flour
5 cups milk
Salt and peper to taste

Break up sausage in a pot and brown it. Coutinue to break sausage as it cooks into as small of pieces as you can--be patient at this stage. After sausage is well browned but not crispy, add flour to the sausage/grease mixture. The flour needs to fry a little until browned. Slowly add milk, stirring constantly to avoid lumps. Keep stirring until mixture has thickeened. Salt and pepper to taste. Server over baking powder biscuits.
