Pinto Beans



Add home made rolls to this recipe and you have my favorite meal.

6 cups pinto beans, dry
3 Tablespoons sugar (Grandmother said you always put as much sugar as salt in a recipe)
2 Tablespoons salt
6 slices bacon (raw)
3 cloves garlic

Wash beans and remove any rocks. Let beans soak about six hours in water to cover. Pour water off and rinse beans again. (Very important step) Put in pot and cover with water until water is four inces above the beans. Ad baco, salt, sugar, and garlic. Cover and bring to boil, then turn down heat until beans stay at a very slow boil. Cook beans until soft--about four hours. Water will need to be added as beans cook. When water level is even with the beans, you will have to add about 3 cups of water. Turn the heat back up until water begins to boil again and then turn heat back down to maintain a slow boil. This will probably have to be done more than once so watch beans carefully. TIP: Make chili out of the leftovers.
