This recipe was given to me by Stephanie Abney back in Arizona. The only thing I've added is the streusel topping. Makes 12 normal size muffins.
Ingredients:
1/2 cup butter (1 cube)
1 cup brown sugar
1 egg
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 tsp vanilla
1 cup milk
Mix butter & sugar together then add everything else in a bowl being careful not to overmix. Fill greased muffin cups about 1/2 full.
For streusel topping:
Combine:
1/3 cup Bisquick
1/3 cup brown sugar
1/2 teaspoon cinnamon
Cut in 2 Tablespoons firm butter until mixture is crumbly.
Sprinkle on top of each muffin
Bake at 375 degrees for about 20 minutes.
